Customer Needs & Challenges

The customer needed a cooking suite that stands in the middle of the room instead of against a wall. The main challenges were:

  1. The suite has no wall to lean on, so the base frame had to carry the griddle and the filled holding wells and stay rigid without a back panel to brace against.
  2. The holding wells had to be uniform in depth and rim height so standard gastronorm pans sit flush, with an upstand around the counter to catch spills before they reach the floor.
  3. Each island has its own suspended hood, so the hood footprint had to match the island below it while leaving clearance for the glass walls and the ceiling height.
  4. Free-standing cooking equipment gets knocked from every side, so corners and guest-facing edges had to be turned and polished instead of left as raw sheet edges.

Our Solution

The islands were built as self-supporting units, with the wells, griddle station and burner section planned on one drawing so the top surface stays continuous across the suite.

Item Actual Configuration
Product Free-standing island cooking suite (holding wells, griddle station, burner section)
Dimensions Two islands at 3,000 x 900 x 850 mm each; centre burner section 1,500 x 900 x 850 mm
Material 304 stainless steel throughout
Sheet Thickness 1.5 mm worktop over a reinforced frame; 1.2 mm side and end panels
Structure Welded self-supporting base frame, recessed bain-marie wells with drainage, griddle plate set into a raised frame with hinged covers, swing faucet with spray, open under-shelving, adjustable feet
Surface Finish Brushed satin finish; exposed edges and corners turned and polished
Quantity 2 x island units with bain-marie holding wells and griddle station, 1 x two-burner centre section, 2 x suspended hoods
Packaging Foam-wrapped worktops in plywood crating; hoods crated separately

Manufacturing & Quality Control

Because the suite is open on all four sides, the finish work mattered as much as the structure:

  • Frames were squared and welded on a flat table, so the wells and griddle plates sit level once the unit is set down on site.
  • Bain-marie wells were filled and checked before the drainage was connected, to confirm the base falls to the drain.
  • Griddle plates were checked for level and for an even fit in the frame; hinged covers were checked for smooth travel and correct seating.
  • Open-shelving edges, corners and guest-facing returns were de-burred and polished on every side, and each island was checked against the drawing before packing.

Results

The suite was delivered as complete islands and set in position without on-site fabrication. Key value delivered:

  • Holding wells, griddle and burner section form one unit that can be positioned as a complete cooking island rather than assembled from separate appliances.
  • Uniform well rims mean standard gastronorm pans sit flush, so nothing has to be shimmed on site.
  • Open under-shelving keeps the suite easy to hose down from any side, which matters for equipment standing in the middle of a room.
  • A hood over each island keeps extraction close to the cooking surface instead of relying on one large canopy.
